Latest recipe addition from the island of Pico in the Azores

One of the oldest recipes for tender pork comes from the island of Pico- Pork loin braised in milk is a very very old method which came with settlers to the island of Pico. The result is a very tender, and moist loin of pork, unlike the drier result of roasting. At first I was skeptical when my friend Ester Mendonca from Pico taught me this dish. I have added my own touch to create a flavorful sauce to serve with it.
