Sardine Pate (Pasta' de Sardinhas)

Serves 4 

2  large grilled sardines, completey cool

Portuguese fresh cheese or substitute Cream cheeseHot sauce to taste 

1.  Separate the heads from the fish bodies and discard.  Remove the bones and heavy skins. 

2. Chop the sardines and m ix in a bowl with about 1 cup of cheese and hot sauce to taste.  Season with fresh ground pepper.  Serve with toasted corn bread, pão caseiro or water crackers.
